I have made this a couple of times and I don't have it quite right. It doesn't make clusters. I have been using brown sugar but maybe honey would make it clustery. I'll let you know if I figure it out. It is VERY tasty. You can buy some of these ingredients in bulk at Whole Foods.
Preheat oven to 350 degrees
• 3 to 4 cups of rolled oats (old fashioned not quick cooking)
• 1/2 cup raw sunflower seeds
• 1/2 cup chopped almonds (I used peanuts)
• 1/4 cup sesame seeds
• 1/4 cup flax seeds
• 1/2 cup oil
• 1 tbsp carob powder or cocoa (optional)
• 1 tsp cinnamon (or to taste, I used more)
• 1/4 to 1/2 cup sweetener (I used 1/2 cup with four cups oats and it wasn't very sweet but I liked it that way)
1/2 tsp salt
SET ASIDE:
• 1/2 cup shredded coconut
• 1/2 cup raisins
• 1/2 cup chopped dates
• 1/2 cup dried cranberries
You can adjust ingredients. I added more raisins and cranberries because I didn't have coconut or dates.
In a large bowl, mix together the oat flakes, seeds and nuts. In a smaller bowl wisk together sweetener, oil and flavorings. Combine with oat mixture. Spread on large cookie sheet or lasagna pan and bake for 12 to 15 minutes. Turn over mixture and bake an additional 8 to 10 minutes. Mix in dried fruits and let cool stirring every 10 minutes. Store in air-tight container(s). Serve with soy milk or milk and fresh fruit if desired.
