Onion Parm

Well my mouth started to water as I cooked the Chicken Parm and was thinking about the nice crust on the outside and that's when I thought to put the same crust on the onions that I was cooking for my pasta. I imagine you could put this coating on pepper rings and tomato slices too .. and of course on eggplant.

Ingredients:

  • 2 or 3 onions sliced into 1/4 inch pieces (do NOT separate into rings)
  • 1 egg beaten with a little water
  • 1/2 cup italian style bread crumbs
  • 1/4 cup grated parmesan cheese
  • spices to taste. I use salt, pepper, paprika, (basil and oregano if bread crumbs are plain)
  • olive oil

Heat 1/4 to 1/2 inch olive oil in heavy pan. Dip onions into egg and coat with crumb mixture. Place carefully into hot oil and brown on each side. Move to greased baking dish and continue to cook in a 350 degree oven for five to ten minutes until all onions are fried. Serve over pasta  topped with sauce or cheese then onions on top.
