French Onion Soup

5 tablespoons of butter

2 cloves of garlic minced

5 onions thinly sliced

1 to 2 teaspoons of ground thyme or thyme leaves

1 teaspoon sugar

1 tablespoon flour

2 or 3 tablespoons of tomato paste

salt, pepper, paprika to taste

1/2 cup wine

2 or 3 bouillon cubes vegetable or meat

1 carrot peeled and cut in half (optional, just for flavor not part of soup)

5 cups hot water

For serving:

cheddar or other grated cheese

french bread slices, slightly toasted

• melt butter in large soup or sauce pan

• add minced garlic and saute

• add onions and saute until limp

• mix in flour, sugar, spices, and all other ingredients, water last of all

• simmer for 45 minutes on low, covered loosely

• bread can be toasted in oven with grated cheese on top, not hard just slightly toasted

• ladle soup into dishes and top each with bread and cheese slice

Makes about 6 servings
