This is a delicious salad that I have had at the restaurant "12-Grapes" here in Peekskill. It was really easy to re-create, and there are many different versions of it out there, so anything can be altered. Enjoy!
Dressing:
equal parts: fresh-squeezed lemon juice, sherry vinegar, extra virgin olive oil
Salad: portion to your taste/ number of people
mixed baby greens (spinach, romaine, and red leaf are our favs)
1/2 - 1 bosc pair (or other type) per person
gorgonzola or blue cheese
maple-glazed walnuts (recipe follows)
Mix together and pour dressing just before eating. The dressing can get a little sour (which I love), but if you don't like it maybe try a different kind of vinegar. The walnuts are delicious on their own as well, or with cheese and crackers.
Maple-glazed Walnuts:
2 cups raw walnuts
1/3 cup maple syrup
Kosher or other flake salt
Place a dry skillet over medium heat. Add the walnuts and maple syrup, stirring to thoroughly coat. Continue stirring until the syrup begins to caramelize and the walnuts become glossy, approximately 3-4 minutes. Remove from heat and spread them out on a piece of parchment or wax paper. Immediately sprinkle with salt while they are still sticky. Store in an air-tight jar.
